PEP078 Ancho 101
This pepper is what real Mexicans use to make chile rellanos. Heart-shaped fruits, 4 by 2-1/2" at the shoulder, have medium-thick walls and turn from blackish-green to rust red as they mature. The richly-flavored mature peppers are often dried and ground into chili peppers. Peppers tape to a blunt point, and wrinkled skin takes on even more character when dried. Plants are 30 to 36" tall with a spreading habit. Dried peppers may be strung into long ropes are made into wreaths. 76-80 days.

PEP087 Cayenne Long Red Slim
These long, slender, wrinkled, very hot peppers are especially good for pickles, canning and drying. Brilliant red peppers are no thicker than a pencil. Fiery red, makes excellent chili and home salsa. Two-celled fruits start out dark green, and then ripen to a bright red color. 72 days.

PEP106 Macho Nacho Hybrid
Here's a macho-impressive jalapeno, with a big powerful taste! Jumbo-sized fruits are fatter, thicker, heavier, a bit hotter, and up to a full inch longer than regular jalapenos. Big, 4" fruits are usually used green, but they will mature red. Plants are exceptionally vigorous and high yielding, setting heavy loads of meaty fruits about a week earlier than typical jalapenos. 68-70 days.

PEP111 Pasilla Bajio
The "chile negro" pepper so popular in the Southwest and Mexico when used fresh. While classified as a hot pepper, Pasilla ("little raisin") has almost no heat. Fruits have a berry, almost herbal, flavor, and add a zest to sauces, soups, stews and dishes. Note about seed germination:
Most species of seeds have hard casings to protect the seed "embryo". For most of these "hard" seeds, the outer shell must be scarred, scratched or softened in some way. Some species take up to a year to germinate and will need help in the beginning to get the shell softened. Most varieties of slow germinating seeds will turn black and rot if there is not sufficient heat in the soil (75 to 90 degrees F. for most species) or if the soil dries out or is allowed to remain too wet, which will encourage the growth of one or another of the varieties of fungus or mold. It is important to speed up germination and to get the plants growing as soon as possible in order to avoid potential problems.
   Anyone who has soaked dried beans before cooking is familiar with the process of softening up the shell. When the outer shell is softened it allows the contents to expand. Potassium Nitrate (Saltpeter) can help in softening up these outer shells. It is available in many drug stores, but for those who have difficulty obtaining a small amount, we offer 1 teaspoon packets for $1.00.
     Soak the seeds in a solution of one teaspoon of the Saltpeter to one quart of warm water for at least 24 hours. Do not allow the seeds to dry out but sow them immediately using the remaining solution to water the soil or other growing medium. Soak several species of seeds at once in smaller containers of the same solution and have the containers of growing medium or soil ready for planting as soon as the soaking period is complete.
